- Combine 2 cups plain flour, 1/2 cup wholemeal flour, 1 tablespoon chilli flakes, and 1 teaspoon salt in a food processor.
- Pulse until just combined.
- Add 1 cup grated cheddar cheese and 1/2 cup grated parmesan cheese; pulse very briefly.
- Add 175g (1 1/2 sticks) cold unsalted butter, cut into cubes, and pulse until the mixture resembles coarse breadcrumbs.
- Add 1/4 cup milk and process until the mixture forms a ball.
- Turn the dough out onto a lightly floured surface and knead lightly until it comes together.
- Roll the dough into a log approximately 5cm in diameter.
- Wrap the log in baking paper and twist the ends.
- Chill in the refrigerator for at least 30 minutes, or until firm enough to slice (or freeze for later use).
- Preheat oven to 180°C (350°F).
- Cut the chilled log into 5mm thick slices.
- Place the biscuit slices onto baking paper-lined baking sheets. No need to grease.
- Bake for 12-15 minutes, or until golden brown.
- Remove from the oven and let cool slightly on the baking sheets before transferring to a wire rack to cool completely.
- Makes approximately 40-50 biscuits.
