How to Make Chilli And Cheese Savoury Biscuits Cookies

  1. Combine 2 cups plain flour, 1/2 cup wholemeal flour, 1 tablespoon chilli flakes, and 1 teaspoon salt in a food processor.
  2. Pulse until just combined.
  3. Add 1 cup grated cheddar cheese and 1/2 cup grated parmesan cheese; pulse very briefly.
  4. Add 175g (1 1/2 sticks) cold unsalted butter, cut into cubes, and pulse until the mixture resembles coarse breadcrumbs.
  5. Add 1/4 cup milk and process until the mixture forms a ball.
  6. Turn the dough out onto a lightly floured surface and knead lightly until it comes together.
  7. Roll the dough into a log approximately 5cm in diameter.
  8. Wrap the log in baking paper and twist the ends.
  9. Chill in the refrigerator for at least 30 minutes, or until firm enough to slice (or freeze for later use).
  10. Preheat oven to 180°C (350°F).
  11. Cut the chilled log into 5mm thick slices.
  12. Place the biscuit slices onto baking paper-lined baking sheets. No need to grease.
  13. Bake for 12-15 minutes, or until golden brown.
  14. Remove from the oven and let cool slightly on the baking sheets before transferring to a wire rack to cool completely.
  15. Makes approximately 40-50 biscuits.
