Zubereitung von Chocolate Strawberry Tart
- Preheat oven to 350°F (175°C). Grease a 9-inch fluted tart pan with removable bottom using nonstick cooking spray.
- Prepare the crust: In a food processor, combine 1 ½ cups (190g) chocolate sandwich cookies, ½ cup (60g) chopped pecans or walnuts, and ¼ cup (50g) granulated sugar. Pulse until finely crumbed.
- Add 1 large egg white to the food processor and pulse just until the mixture is evenly moistened.
- Press the crumb mixture firmly into the bottom and up the sides of the prepared tart pan. Freeze for 10 minutes to firm up.
- Line the crust with foil and fill with pie weights or dried beans. Bake for 20 minutes.
- Remove the foil and pie weights/beans. Bake for another 5 minutes, or until the crust is lightly golden brown.
- Cool the crust completely in the pan on a wire rack.
- Meanwhile, make the chocolate ganache: In a medium saucepan, combine 1 cup (240ml) heavy cream and 4 ounces (115g) unsalted butter. Heat over medium heat until the butter is melted and the mixture is smooth.
- Remove from heat and stir in 8 ounces (225g) semi-sweet chocolate chips. Let stand for 2 minutes to allow the chocolate to melt.
- Whisk until the ganache is smooth and glossy.
- Let the ganache cool to room temperature (about 1 hour) until it's cool but still pourable.
- Pour the ganache into the cooled tart crust.
- Arrange fresh strawberries, cut-side down, over the ganache.
- Refrigerate for at least 2 hours, or preferably overnight, to allow the filling to set completely.
- To serve: Run a thin knife or offset spatula around the edge of the tart to loosen it from the pan. Place the tart pan on a small, sturdy bowl and carefully release the sides of the pan. Gently slide the tart onto a serving plate.
