- Preheat oven to 200°C (180°C fan/Gas Mark 6). Line a 12-cup muffin tin with paper cases.
- Combine all ingredients EXCEPT milk in a food processor. Blend until completely smooth.
- With the food processor running, slowly pour in the milk through the feed tube until a soft, droppable batter forms. Alternatively, whisk all ingredients together by hand until smooth.
- The batter should be smooth and slightly thick.
- Evenly spoon the batter into the prepared muffin cases, filling each about 2/3 full.
- Bake for 15-20 minutes, or until a skewer inserted into the center comes out clean and the tops are golden brown.
- Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Once cool, if necessary, level the tops of the cupcakes with a serrated knife to create a flat surface for icing.
- Prepare the icing according to the package instructions.
