Cómo preparar Fluffy Scones

  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, sift together 225g all-purpose flour, 4 tsp baking powder, and 1/2 tsp salt.
  3. Using your fingertips, gently rub 55g cold unsalted butter into the flour mixture until it resembles coarse breadcrumbs.
  4. Make a well in the center of the dry ingredients.
  5. In a separate bowl, whisk together 150ml milk and 2 tbsp cold water. Reserve 1 tbsp of the milk mixture for glazing.
  6. Gradually add the wet ingredients to the dry ingredients, gently mixing with a fork until a soft dough just forms. Do not overmix!
  7. Lightly flour a clean surface. Turn the dough out onto the surface and gently pat it down to about 2cm thickness. Use a 5cm cookie cutter (or knife) to cut out scones.
  8. The dough will be slightly sticky, but avoid adding too much extra flour. Gently transfer the scones to the prepared baking sheet.
  9. Brush the tops of the scones with the reserved milk mixture.
  10. Bake for 12-15 minutes, or until golden brown and well-risen.
