  2. Divide 1/4 cup (60ml) maple syrup evenly among six 6-ounce custard cups. Tilt cups to coat the sides completely.
  3. In a medium bowl, whisk together 4 large eggs, 15 ounces (425g) ricotta cheese, 1/2 cup (100g) granulated sugar, 1 teaspoon vanilla extract, and 1 teaspoon maple syrup until well combined, but do not overmix.
  4. Place the custard cups in a 9x13 inch baking dish.
  5. Carefully pour the egg mixture into the custard cups, filling them about ¾ full.
  6. Sprinkle a pinch of freshly grated nutmeg over each flan.
  7. Place the baking dish on an oven rack.
  8. Pour boiling water into the baking dish until it reaches about 1 inch up the sides of the custard cups.
  9. Bake for 40-45 minutes, or until a toothpick inserted near the center comes out clean.
