  6. In a large bowl, combine 1 (15-ounce) can black beans, rinsed and drained, ½ cup cornmeal, ½ cup shredded pepper jack cheese (or Monterey Jack/Cojack with minced pepper), ½ medium onion, finely chopped, 1 clove garlic, minced, 1 teaspoon ground cumin, and ¾ cup water.
  7. Season with salt and pepper to taste.
  8. Carefully slice poblano peppers in half lengthwise and remove seeds and membranes. If peppers are flat, slice deeper to create a well for stuffing.
  9. Evenly divide the bean mixture among the poblano halves, filling generously.
  10. Place stuffed poblanos on top of the sauce in the baking dish.
  11. Sprinkle the poblanos with the remaining ½ cup shredded cheese.
  12. Cover the baking dish tightly with aluminum foil.
  13. Bake for 45 minutes.
  14. Remove foil and continue baking for 10-15 minutes, or until the sauce has thickened slightly and the cheese is golden brown and bubbly.
