  7. Gently fold the egg whites into the chocolate mixture in two additions, being careful not to deflate the egg whites. Fold until just combined.
  8. Pour the batter into the prepared pan and spread evenly.
  9. Bake for 70-80 minutes, or until a skewer inserted into the center comes out with only moist crumbs attached. If the cake starts to brown too much, tent it loosely with foil.
  10. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
