  4. Reduce heat to low and simmer gently, stirring occasionally, until the sauce has thickened to a relish-like consistency – approximately 1 hour. The chutney will thicken further as it cools.
  5. Remove from heat and let cool completely. Taste and adjust seasoning as needed.
  6. (Optional) To preserve: Ladle the cooled chutney into sterilized pint jars, leaving ½ inch headspace. Wipe the rims clean, and seal with lids and rings.
