- Remove the saucepan from the heat.
- Stir in 1-2 teaspoons of your choice of extract (coffee, vanilla, peppermint, etc.). Let the mixture cool for 5 minutes.
- Beat the fudge vigorously with a wooden spoon or electric mixer until it begins to lose its gloss and thickens considerably.
- Grease a 7x7 inch square baking tin. Pour the fudge into the prepared tin.
- Lightly score the fudge into 25 squares using a knife while it's still slightly soft.
- Allow the fudge to cool completely and set at room temperature. Once firm, cut along the scored lines to create individual squares.
