Como fazer Delicious Oyster Chowder
- Melt 4 tablespoons of butter in a large saucepan over medium heat. Add 1 large chopped onion and 2 cups of diced potatoes. Sauté for 10 minutes, or until softened.
- Pour in 4 cups of milk, 1 cup of heavy cream, 1 cup of clam juice, 1 teaspoon of dried thyme, 1/2 teaspoon of dried oregano, 1 bay leaf, and 1/4 teaspoon of black pepper.
- Bring the mixture to a gentle simmer, reduce heat, and cook for 20 minutes, allowing the flavors to meld.
- Remove the bay leaf.
- Carefully transfer the chowder in batches to a blender or food processor (or use an immersion blender). Puree until smooth. Alternatively, press the chowder through a fine-mesh sieve.
- In a separate small saucepan, gently heat the 25 shelled oysters and their reserved liquor over medium heat. Cook, uncovered, shaking the pan frequently, until the oyster edges curl, about 4 minutes. Do not overcook!
- Gently stir the cooked oysters and their liquor into the pureed chowder. Remove from heat.
- Stir in 2 tablespoons of dry sherry (optional).
- Serve immediately with crusty bread for dipping.
