- In a large mixing bowl, combine 200g mixed dried fruit (raisins, currants, cranberries, etc.), 150g granulated sugar, and 250ml freshly brewed strong tea. Stir well, cover, and let it soak overnight (or for at least 4 hours).
- Preheat your oven to 150°C (300°F).
- Grease and flour a 23cm x 13cm loaf pan (or a 7-inch round cake pan).
- In a separate bowl, gently whisk together 2 large eggs. Add 200g self-raising flour (or 175g all-purpose flour + 2 tsp baking powder), 1 tsp ground cinnamon, ½ tsp ground mixed spice, and 100g orange marmalade.
- Gently fold the wet ingredients (eggs and spice mixture) into the soaked fruit and tea mixture. Do not overmix.
- Pour the batter into the prepared loaf pan and bake for 1½ - 2 hours, or until a wooden skewer inserted into the center comes out clean. Check after 1 hour and cover with foil if browning too quickly.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
