  1. Grease a 24cm springform pan.
  2. Crush 200g Oreo biscuits (or similar chocolate biscuits) into fine crumbs using a food processor. Transfer to a bowl.
  3. Melt 100g unsalted butter. Add to the biscuit crumbs and stir until well combined.
  4. Press the mixture firmly into the bottom of the prepared springform pan. Use the bottom of a measuring cup or your fingers to create an even layer.
  5. Refrigerate for 20 minutes to firm up.
  6. In a large bowl, beat 500g cream cheese, 150g icing sugar, and 100ml milk using an electric mixer until completely smooth and creamy.
  7. In a heatproof bowl, whisk together 1 tablespoon of powdered gelatin and 60ml boiling water until completely dissolved.
  8. With the mixer running on low speed, gradually pour the gelatin mixture into the cream cheese mixture. Mix for another minute until well combined.
  9. Set aside.
  10. In a separate bowl, whip 300ml heavy cream until stiff peaks form.
  11. Melt 150g dark chocolate in a double boiler or microwave. Add half of the cream cheese mixture to the melted dark chocolate and stir gently until combined.
  12. Fold half of the whipped cream into the dark chocolate mixture.
  13. Pour the dark chocolate mixture over the biscuit base and freeze for 10 minutes to set slightly.
  14. Melt 150g white chocolate. Add the remaining cream cheese mixture to the melted white chocolate and stir gently until combined.
  15. Fold the remaining whipped cream into the white chocolate mixture.
  16. Pour the white chocolate mixture over the dark chocolate layer.
  17. Cover and refrigerate overnight (or for at least 6 hours) to allow the cheesecake to fully set.
  18. Optional: Grate extra chocolate and sprinkle over the top before serving.
