  2. Place the turkey breast (approximately 3-4 lbs), skin-side up, in a 13x9 inch baking pan.

  4. Roast uncovered for 25 minutes.

  7. Arrange the following around the turkey breast: 1 medium onion, quartered; 1 bell pepper (any color), chopped; 1 cup chopped carrots; 1/2 cup dried cranberries or cherries; 1 medium sweet potato, peeled and cubed; 1 cup pineapple chunks (fresh or canned, drained).
  8. In a small bowl, whisk together: 1/2 cup reserved pineapple juice, 1/4 cup packed brown sugar, 2 tablespoons ketchup, and 1/4 cup dry red wine.
