How to Make Fruited Turkey Breast

  1. Preheat oven to 450°F (232°C).
  2. Place the turkey breast (approximately 3-4 lbs), skin-side up, in a 13x9 inch baking pan.
  3. Sprinkle 1 teaspoon dried thyme and 1 teaspoon dried rosemary evenly over the turkey breast.
  4. Roast uncovered for 25 minutes.
  5. Remove from oven. Drain off and discard any excess fat and juices.
  6. Reduce oven temperature to 350°F (177°C).
  7. Arrange the following around the turkey breast: 1 medium onion, quartered; 1 bell pepper (any color), chopped; 1 cup chopped carrots; 1/2 cup dried cranberries or cherries; 1 medium sweet potato, peeled and cubed; 1 cup pineapple chunks (fresh or canned, drained).
  8. In a small bowl, whisk together: 1/2 cup reserved pineapple juice, 1/4 cup packed brown sugar, 2 tablespoons ketchup, and 1/4 cup dry red wine.
  9. Pour the sauce evenly over and around the turkey and vegetables.
  10. Loosely cover the pan with foil.
  11. Return to the oven and bake for 1 hour.
  12. Remove foil and continue baking for 20-30 minutes, basting occasionally with the pan juices, until the turkey reaches an internal temperature of 165°F (74°C) and the sauce has thickened.
