- Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat.
- Add 1 pound of cubed lamb and brown well on all sides. Remove the meat from the pan and set aside.

- Bring to a slow boil, then reduce heat to low, cover tightly, and simmer gently for 1 hour and 30 minutes, or until the lamb is very tender.
- Add 1 (15-ounce) can of fava beans (drained and rinsed) 10 minutes before the end of cooking time.
- Remove the garlic cloves and bay leaf. Season with salt and pepper to taste.
- Stir in 1/4 cup of chopped fresh parsley just before serving.
