  1. Preheat oven to 300°F (150°C).

  8. Gradually whisk the remaining cream mixture into the yolks until fully incorporated. Strain the mixture through a fine-mesh sieve into a pitcher for a smoother texture.
  9. Let the mixture cool slightly, about 15 minutes.
  10. Divide the mixture evenly among 4 (6-ounce) ramekins.
  11. Place the ramekins in a roasting pan. Pour hot water into the pan until it comes halfway up the sides of the ramekins (bain-marie).
  12. Cover the roasting pan tightly with aluminum foil.
  13. Bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.
