Como fazer Roasted Garlic Herb Spread

  1. Preheat oven to 425°F (220°C). Position oven rack in the middle.
  2. Cut off and discard the top 1/2 inch of each garlic head, exposing the cloves.
  3. Place garlic heads in a pie plate. Drizzle with 2 tablespoons of olive oil. Add 1 teaspoon of dried oregano, 1/2 teaspoon of dried thyme, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Cover the pie plate tightly with double-layered aluminum foil.
  4. Roast for 75-90 minutes, or until the garlic is golden brown and very tender.
  5. Once cool enough to handle, gently squeeze the roasted garlic cloves into a bowl. Strain the oil from the pie plate through a fine-mesh sieve into the bowl with the garlic.
  6. Mash the garlic well with a fork. Add more salt and pepper to taste.
