- Preheat oven to 225°F (107°C). Grease and flour a 10-inch tube pan; dust out excess flour.
- In a large, clean, dry bowl, beat 12 large egg whites with a whisk until soft peaks form.
- Add 1/2 teaspoon of salt and beat until stiff, glossy peaks form.
- Gradually add 1 1/2 cups granulated sugar and 1 1/2 teaspoons cream of tartar, beating with a mixer on high speed until stiff and glossy peaks form.
- In a separate bowl, gently sift together 1 1/2 cups cake flour and 1/4 teaspoon salt.
- Gradually fold the dry ingredients into the egg white mixture in thirds, being careful not to deflate the egg whites.
- Stir in 1 teaspoon almond extract.
- Carefully pour the batter into the prepared pan and bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
- Immediately invert the pan onto a wire rack and let the cake cool completely upside down (at least 3 hours).
