How to Make Baked Brisket Au Jus

  1. Preheat oven to 325°F (160°C).
  2. Grease a large (at least 9x13 inch) casserole dish.
  3. Spread 2 stalks of celery, thinly sliced, and 1/2 a medium yellow onion, thinly sliced, on the bottom of the casserole dish.
  4. Place a 3-4 lb beef brisket on top of the onions and celery in the casserole dish.
  5. Season generously with salt and freshly ground black pepper.
  6. Top the brisket with the remaining 1/2 medium yellow onion, thinly sliced, and 2 cloves of garlic, minced.
  7. In a small bowl, whisk together 2 tablespoons tomato paste, 1 cup tomato sauce, and 1 tablespoon Worcestershire sauce.
  8. Pour the tomato mixture evenly over the brisket.
  9. Bake uncovered at 325°F (160°C) for 1 hour.
  10. Remove from oven and tightly cover the casserole dish with aluminum foil.
  11. Bake for another 2 hours.
  12. Add 1 cup of freshly brewed coffee to the casserole dish, cover, and bake for an additional 2 hours, checking every 30 minutes. Add 1/4 cup of water if the liquid appears to be drying out.
  13. Carefully remove the brisket from the casserole dish and let it rest for 20 minutes, loosely tented with foil.
  14. Using a sharp knife, slice the brisket thinly across the grain.
  15. Strain the pan drippings to remove solids and serve the delicious au jus alongside the sliced brisket.
