How to Make Banana And Mars Bar Cake

  1. Preheat oven to 180°C (350°F).
  2. Grease and flour a 7 x 11 x 21cm loaf pan, or line with parchment paper.
  3. In a large bowl, cream together 150g (1 1/2 sticks) softened butter and 60g (1/4 cup) packed brown sugar until light and fluffy.
  4. Beat in 2 large eggs one at a time, then mash in 2 ripe bananas.
  5. In a separate bowl, whisk together 200g (1 3/4 cups) self-raising flour and 180g (3 x 60g bars) chopped Mars bar.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with 120ml (1/2 cup) milk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Meanwhile, prepare the icing: In a small bowl, whisk together 100g (1 cup) icing sugar, 30ml (2 tbsp) caramel topping, and 5ml (2 tsp) hot water until smooth. Add more hot water, 1 teaspoon at a time, if needed to reach desired consistency.
