How to Make Basic Almond Pesto

  1. Add 4 cloves of garlic and 1/2 cup blanched almonds to a large pestle and mortar. Add a pinch of salt.
  2. Gradually add 2 cups of fresh basil leaves, a small handful at a time, pounding and grinding the leaves against the side of the bowl until a paste forms.
  3. Stir in 1/2 cup of grated Parmesan cheese and mix thoroughly.
  4. With the pestle or a fork, slowly drizzle in 1/4 cup of extra virgin olive oil while continuously mixing. Add the juice of 1/2 a lemon. Season generously with salt and freshly ground black pepper to taste.
  5. Transfer the pesto to a screw-top jar and refrigerate until ready to serve. Enjoy!
