How to Make Berry Delight

  1. In a medium saucepan, combine 1/2 cup granulated sugar and 1 (1 ounce) package of unflavored gelatin.
  2. Gradually whisk in 1 cup of berry juice (any combination of strawberry, blueberry, etc.). Cook over low heat, stirring constantly, until the gelatin is completely dissolved (about 5 minutes).
  3. Remove from heat and stir in the remaining 2 cups of berry juice and 2 tablespoons of fresh lemon juice.

  6. Gently stir 1 cup of fresh blueberries into the remaining gelatin mixture. Spoon this mixture carefully over the strawberry layer in the ring mold.
  7. Refrigerate overnight (or for at least 6 hours) to allow the dessert to fully set.
  8. To unmold, run a thin knife around the edge of the mold. Invert onto a serving platter.
