How to Make Black Bean And Corn Wonton Cups

  1. Preheat oven to 350°F (175°C).
  2. Gently press one wonton wrapper into each of 36 small muffin cups, ensuring the wrapper covers the bottom and sides. Be careful not to tear the wrappers.
  3. Bake for 8-10 minutes, or until lightly golden brown. Remove from the oven and let cool completely on a wire rack.
  4. While the wonton cups are baking, prepare the filling. In a medium bowl, combine the black beans, corn, red bell pepper, red onion, cilantro, olive oil, cumin, chili powder, lime juice, salt, and pepper. Mix well.
  5. Once the wonton cups are cool, gently spoon the bean mixture into each cup, filling almost to the top.
  6. Just before serving, top each wonton cup with 1/2 teaspoon of sour cream and garnish with a fresh cilantro sprig.
