How to Make Caramel Pecan Oatmeal Bars

  1. Preheat oven to 350°F (175°C).
  2. Place 1 cup pecan halves in a single layer on a baking sheet.
  3. Bake for 4-5 minutes, stirring occasionally, until lightly toasted. Remove from oven and let cool completely.
  4. Line a 13x9 inch baking pan with aluminum foil, leaving 2-3 inches of overhang on the sides for easy removal.
  5. Lightly grease the foil.
  6. In a large bowl, combine 1 box (15.25 oz) yellow cake mix and 3 cups rolled oats.
  7. Cut in 1 cup (2 sticks) unsalted butter using a pastry blender or your fingers until the mixture is crumbly and resembles coarse crumbs.
  8. Press half of the oat mixture evenly into the bottom of the prepared pan.
  9. Sprinkle 1 cup semi-sweet chocolate chips and the toasted pecans evenly over the oat mixture.
  10. Sprinkle the remaining oat mixture evenly over the chocolate chips and pecans.
  11. Bake at 375°F (190°C) for 30-35 minutes, or until the top is golden brown and set.
  12. While the bars are baking, microwave 14 oz caramels and 1 tablespoon water in a microwave-safe bowl on high for 1 minute, or until melted and smooth. Stir until smooth.
  13. Drizzle the melted caramel evenly over the warm bars.
  14. Let the bars cool completely in the pan on a wire rack for at least 1 hour.
  15. Once cooled, lift the bars from the pan using the foil overhang as handles.
  16. Place on a cutting board and cut into 24 bars.
