How to Make Coconut Chocolate Bites

  1. Line an 8x8 inch baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides for easy lifting.
  2. In a medium bowl, gently combine the sweetened flaked coconut (3 cups) and the condensed milk (14 ounces) using your fingers or a spatula until evenly moistened.
  3. Press the coconut mixture firmly and evenly into the bottom of the prepared pan.
  4. Refrigerate uncovered for 5 minutes to firm slightly.
  5. Melt the chocolate chips (12 ounces) in a double boiler or microwave in 30-second intervals, stirring until smooth and melted.
  6. Carefully pour the melted chocolate over the coconut layer. Spread evenly using an offset spatula or the back of a spoon.
  7. Refrigerate for 5-7 minutes, or until the chocolate is set.
  8. Using the parchment paper overhang, lift the confection out of the pan onto a cutting board.
  9. Cut the confection in half lengthwise to create two 8x4 inch rectangles.
  10. Place the two rectangles together, coconut sides inward, to form an 8x4 inch rectangle. Remove the parchment paper.
  11. Cut the rectangle into 32 equal squares.
  12. Arrange the squares in paper cups on a platter or serving dish.
  13. Refrigerate, covered, until ready to serve. Enjoy!
