How to Make Concord Grape Conserve
- Gently rinse 4 cups of Concord grapes. Carefully slip the skins off the grapes, reserving the skins in a separate bowl.
- Place the grape pulp in a large stainless steel or enamel saucepan. Bring to a boil over medium-high heat.
- Reduce heat to low and simmer for 10-15 minutes, or until the seeds are softened and easily separated from the pulp.
- Carefully press the grape pulp through a food mill or fine-mesh sieve to remove the seeds. You should have approximately 3 cups of grape puree.
- In the same saucepan, combine the grape puree, reserved grape skins, 3 cups of honey, the thinly sliced lemon, 1 cup of raisins, and 1/2 cup of chopped pecans.
- Simmer over low heat for 10-12 minutes, stirring occasionally, until the raisins are plump and the mixture has slightly thickened.
- While the conserve simmers, prepare your jars by sterilizing them in boiling water for 10 minutes. Let them air dry on a clean towel.
- Ladle the hot conserve into the sterilized jars, leaving 1/4 inch of headspace at the top.
- Wipe the rims of the jars clean, and firmly attach the lids and rings.
- Process the filled jars in a boiling water bath for 10 minutes. Adjust processing time according to altitude (see altitude adjustment chart for details).
- Remove jars from the boiling water bath and let them cool completely. You should hear a satisfying 'pop' sound as the jars seal.
