How to Make Concord Grape Conserve

  1. Gently rinse 4 cups of Concord grapes. Carefully slip the skins off the grapes, reserving the skins in a separate bowl.
  2. Place the grape pulp in a large stainless steel or enamel saucepan. Bring to a boil over medium-high heat.
  3. Reduce heat to low and simmer for 10-15 minutes, or until the seeds are softened and easily separated from the pulp.
  4. Carefully press the grape pulp through a food mill or fine-mesh sieve to remove the seeds. You should have approximately 3 cups of grape puree.
  5. In the same saucepan, combine the grape puree, reserved grape skins, 3 cups of honey, the thinly sliced lemon, 1 cup of raisins, and 1/2 cup of chopped pecans.
  6. Simmer over low heat for 10-12 minutes, stirring occasionally, until the raisins are plump and the mixture has slightly thickened.
  7. While the conserve simmers, prepare your jars by sterilizing them in boiling water for 10 minutes. Let them air dry on a clean towel.
  8. Ladle the hot conserve into the sterilized jars, leaving 1/4 inch of headspace at the top.
  9. Wipe the rims of the jars clean, and firmly attach the lids and rings.
