How to Make Sugar Free Pear Butter
- In a large kettle, combine 1 cup water and 1/4 cup lemon juice.
- Peel, core, and quarter approximately 6 pounds of ripe pears. Immediately place the pear quarters in the lemon juice mixture to prevent browning.
- Drain the lemon juice mixture from the kettle, reserving the lemon juice.
- Add 2 cups of grape juice and the reserved lemon juice to the kettle.
- Bring the mixture to a rolling boil over medium-high heat.
- Reduce heat to medium-low, and add the drained pear quarters.
- Simmer until the pears are very soft, about 20-25 minutes, stirring occasionally to prevent sticking.
- Allow the pear mixture to cool slightly.
- Puree the pear mixture using a food mill, sieve, or immersion blender until completely smooth.
- Return the pear puree to the kettle.
- Add 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/4 teaspoon ground cloves.
- Cook and stir the mixture over medium-low heat until it reaches a very thick consistency, about 20-35 minutes. The pear butter should coat the back of a spoon.
- Remove from heat and stir in your preferred sugar substitute (e.g., stevia, erythritol) to taste. Start with 1/4 cup and add more until desired sweetness is reached.
- Pour the sugar-free pear butter into sterilized jars or airtight containers.
- Refrigerate for at least 24 hours to allow the flavors to meld. Store in the refrigerator for up to 3 weeks.
