How to Make Sugar Free Pear Butter

  1. In a large kettle, combine 1 cup water and 1/4 cup lemon juice.
  2. Peel, core, and quarter approximately 6 pounds of ripe pears. Immediately place the pear quarters in the lemon juice mixture to prevent browning.
  3. Drain the lemon juice mixture from the kettle, reserving the lemon juice.
  4. Add 2 cups of grape juice and the reserved lemon juice to the kettle.
  5. Bring the mixture to a rolling boil over medium-high heat.
  6. Reduce heat to medium-low, and add the drained pear quarters.
  7. Simmer until the pears are very soft, about 20-25 minutes, stirring occasionally to prevent sticking.
  8. Allow the pear mixture to cool slightly.
  9. Puree the pear mixture using a food mill, sieve, or immersion blender until completely smooth.
  10. Return the pear puree to the kettle.
  11. Add 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/4 teaspoon ground cloves.
  12. Cook and stir the mixture over medium-low heat until it reaches a very thick consistency, about 20-35 minutes. The pear butter should coat the back of a spoon.
  13. Remove from heat and stir in your preferred sugar substitute (e.g., stevia, erythritol) to taste. Start with 1/4 cup and add more until desired sweetness is reached.
  14. Pour the sugar-free pear butter into sterilized jars or airtight containers.
  15. Refrigerate for at least 24 hours to allow the flavors to meld. Store in the refrigerator for up to 3 weeks.
