How to Make Crock Pot Calico Chicken Chili

  1. Melt 2 tablespoons of butter in a large skillet over medium heat. Add 1 medium onion, chopped, and 1 teaspoon ground cumin. Cook until the onion is softened, about 5 minutes.
  2. Add 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes, to the skillet.
  3. Cook the chicken until cooked through, about 5-7 minutes, stirring occasionally.
  4. Transfer the chicken and onion mixture to a 6-quart slow cooker.
  5. Add 1 (15-ounce) can of white beans, rinsed and drained; 1 (15-ounce) can of black beans, rinsed and drained; 1 (15-ounce) can of chickpeas, rinsed and drained; 1 (15-ounce) can of corn, drained; 1 (4-ounce) can of diced green chilies, undrained; 4 cups of water; and 2 bouillon cubes. Stir well to combine.
  6. Cook on high for 4 hours, or on low for 8 hours, until the chicken is tender and the flavors have melded.
