How to Make Deep Dark Chocolate Sour Cream Bars

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease the bottom of a 13x9 inch baking pan with nonstick cooking spray.
  3. Reserve 1 cup of the chocolate cake mix and set aside.
  4. In a large bowl, combine the remaining cake mix, 1 large egg, and 1/4 cup (57g) melted unsalted butter.
  5. Mix on low speed with an electric mixer for 1-2 minutes, until well combined.
  6. Press the mixture into the prepared baking pan to form the crust.
  7. In a medium bowl, combine the remaining 3 large eggs, 1 cup (227g) sour cream, 1/2 cup (100g) packed light brown sugar, and 1/2 cup (113g) melted unsalted butter.
  8. Beat on low speed with an electric mixer until well blended.
  9. Add the reserved 1 cup of cake mix and beat on medium speed for 2 minutes, until smooth.
  10. Stir in 1 cup (170g) semi-sweet chocolate chips.
  11. Pour the chocolate mixture evenly over the prepared crust.
  12. Bake for 35-38 minutes, or until the bars are set and lightly golden on top. A toothpick inserted into the center should come out with moist crumbs attached.
  13. Let cool completely in the pan before cutting into bars.
  14. Dust with unsweetened cocoa powder (optional).
