How to Make Fig Spread

  1. In a medium saucepan, combine 1 pound fresh figs, 1 cup granulated sugar, and 1 1/2 cups water.
  2. Bring the mixture to a rolling boil over medium-high heat.
  3. Reduce heat to low, cover the saucepan, and simmer gently for 30-40 minutes, or until the figs are very soft and most of the liquid has evaporated. Stir occasionally to prevent sticking.
  4. Remove from heat and let the fig mixture cool slightly.
  5. Transfer the cooled fig mixture to a food processor.
  6. Add 2 tablespoons of fresh lemon juice.
  7. Puree until completely smooth and creamy. Scrape down the sides of the food processor as needed.
  8. Transfer the fig spread to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld. Store in the refrigerator for up to 1 month.
