How to Make Filipino Fish Adobo
- In a large bowl, combine all ingredients EXCEPT oil: 1 lb fish fillets (cut into 2-inch pieces), 1/2 cup soy sauce, 1/4 cup cane vinegar, 2 tablespoons cane sugar, 4 cloves garlic (minced), 1 teaspoon black peppercorns, 1 bay leaf.
- Marinate the fish in the mixture for at least 1 hour (longer is better!).
- In a medium saucepan, bring the marinated fish and its sauce to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer gently for 5 minutes.
- Carefully remove the fish from the saucepan and set aside.
- Increase heat to medium-high and boil the remaining sauce until it reduces by half, about 10-15 minutes, or until slightly thickened. Set aside.
- Heat 2 tablespoons of cooking oil in a large skillet over medium heat.
- Add the fish to the skillet and fry until lightly browned on both sides, about 3-4 minutes per side.
- Pour the reduced sauce over the fish in the skillet. Simmer for another 3 minutes, allowing the sauce to coat the fish evenly.
- Serve the Filipino Fish Adobo hot, spooned over a generous serving of sticky rice. Enjoy!
