How to Make Fresh Peach Dessert

  1. In a medium saucepan, combine 1 cup cold water, 1 (3.4 ounce) package instant vanilla pudding mix, and 1 (3 ounce) package peach-flavored Jell-O.
  2. Stir constantly over medium heat until the mixture comes to a rolling boil.
  3. Reduce heat to low and simmer for 1 minute, stirring continuously.
  4. Remove from heat and pour into a large bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming, and refrigerate for at least 1 hour, or until completely thickened.
  5. While the pudding mixture chills, peel and slice 4-5 medium ripe peaches. Set aside.
  6. Once the pudding mixture is chilled, gently fold in 1 (8 ounce) container of whipped topping.
  7. Gently fold in the sliced peaches.
  8. In a food processor or blender, combine 1 ½ cups graham cracker crumbs, ¼ cup granulated sugar, and 6 tablespoons (3 ounces) melted butter. Pulse until well combined.
  9. Press the graham cracker mixture into the bottom of a 9x13 inch baking dish or two 9-inch pie plates.
  10. Pour the chilled peach pudding mixture over the graham cracker crust.
  11. Refrigerate for at least 1 hour, or until set.
  12. Serve chilled, topped with additional whipped topping if desired.
