Ingredients for Banana Meringue Delight

  • 6 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon cream of tartar
  • Instant Vanilla Pudding
  • Skim Milk
  • 2 ripe bananas, sliced
  • Graham Cracker Squares

How to Make Banana Meringue Delight

  1. Preheat oven to 300°F (150°C).
  2. In a large, clean, grease-free bowl, beat egg whites with an electric mixer until soft peaks form.
  3. Gradually add sugar and cream of tartar, continuing to beat until stiff, glossy peaks form.
  4. Beat in vanilla extract and salt until well combined.
  5. Generously spray a 9x9 inch glass baking dish with non-stick cooking spray.
  6. Spread meringue evenly over the bottom and sides of the prepared dish, forming a crust.
  7. Bake for 45 minutes, or until lightly golden and crisp.
  8. Remove from oven and let cool completely on a wire rack.
  9. While the crust cools, prepare the pudding mix according to package directions, using 2 cups of milk.
  10. Gently fold in the sliced bananas.
  11. Pour the pudding mixture into the cooled meringue crust.
  12. Sprinkle ground graham crackers evenly over the top.
  13. Cover and chill in the refrigerator for at least 2 hours before serving to allow the flavors to meld.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
