How to Make Garlic Cream New Potatoes

  1. Preheat oven to 350°F (175°C).
  2. Cut the tops off 2 heads of garlic and drizzle with 1 tablespoon of olive oil. Roast for 30-40 minutes, or until soft and caramelized.
  3. While the garlic roasts, wash and halve 1 pound of new potatoes. Boil in salted water for 15-20 minutes, or until tender.
  4. Drain the potatoes well and set aside.
  5. Once the roasted garlic is cool enough to handle, squeeze the soft cloves out of their skins.
  6. In a small saucepan, combine the roasted garlic cloves with 4 tablespoons of butter, ½ cup of heavy cream, and a pinch of salt and pepper. Heat gently until the butter is melted and the sauce is smooth and warm.
  7. Add the cooked potatoes to a large bowl and pour the garlic cream sauce over them. Toss gently to coat.
  8. Serve immediately as a delicious side dish.
