How to Make Healthy Nutella Rice
- Soak 1/2 cup raisins in 1/4 cup water for at least 1 hour.
- Preheat oven to 350°F (175°C). Roast 1 cup hazelnuts for 10-12 minutes, or until fragrant and easily peeled.
- Remove hazelnuts from oven and let cool slightly. Wrap in a clean kitchen towel and rub to remove most of the skins.
- Cook 1 cup brown rice according to package directions. (This usually takes around 40-50 minutes)
- While rice is cooking, drain the raisins, reserving the soaking water.
- In a food processor, combine the drained raisins, skinned hazelnuts, 2 tablespoons canola oil, 2 tablespoons unsweetened cocoa powder, and 2 tablespoons of the reserved raisin soaking water. Process until completely smooth, adding more soaking water (1 tablespoon at a time) if needed to reach desired consistency.
- Once the rice is cooked, gently stir in the hazelnut paste. Add 1 teaspoon of honey (or more to taste) if desired.
- Serve warm and enjoy your healthy and delicious Nutella Rice!
