How to Make Herbed Pear Jam

  1. Wash and peel the pears. Core them and chop into small pieces (about 1/2 inch).
  2. In a large saucepan, combine the chopped pears, sugar, lemon juice, and water. Bring to a boil over medium heat, stirring constantly.
  3. Reduce heat to low and simmer for 45-60 minutes, or until the pears are very soft and the jam has thickened. Stir frequently to prevent sticking.
  4. Add the red wine, bay leaves, and cinnamon stick. Continue to simmer for another 15-20 minutes, or until the desired consistency is reached. The jam should sheet off the spoon.
  5. Remove from heat and discard the bay leaves and cinnamon stick.
  6. Ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
  7. Wipe the rims of the jars clean, seal with lids and rings, and process in a boiling water bath for 10 minutes.
  8. Remove jars from the canner and let cool completely. You should hear a ‘pop’ sound as the jars seal. Store in a cool, dark place.
