How to Make Herbed Pear Jam
- Wash and peel the pears. Core them and chop into small pieces (about 1/2 inch).
- In a large saucepan, combine the chopped pears, sugar, lemon juice, and water. Bring to a boil over medium heat, stirring constantly.
- Reduce heat to low and simmer for 45-60 minutes, or until the pears are very soft and the jam has thickened. Stir frequently to prevent sticking.
- Add the red wine, bay leaves, and cinnamon stick. Continue to simmer for another 15-20 minutes, or until the desired consistency is reached. The jam should sheet off the spoon.
- Remove from heat and discard the bay leaves and cinnamon stick.

- Wipe the rims of the jars clean, seal with lids and rings, and process in a boiling water bath for 10 minutes.
- Remove jars from the canner and let cool completely. You should hear a ‘pop’ sound as the jars seal. Store in a cool, dark place.
