How to Make Hot Chocolatier Shots With Spicy Foam
- Pour 1/2 cup (120ml) evaporated milk into a medium mixing bowl.
- Insert beaters into the mixer.
- Freeze for 30 minutes, or until ice crystals form around the edges of the bowl.
- In a medium saucepan, combine the remaining 1/2 cup (120ml) evaporated milk, 1/2 cup (120ml) water, 8 oz (227g) Nestle Chocolatier™ 53% cacao dark chocolate chunks, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, and a pinch of cayenne pepper. Heat over low heat, stirring frequently, until the chocolate is completely melted. Do not boil.
- Set aside the melted chocolate mixture.
- Remove the chilled evaporated milk from the freezer.
- Beat on high speed for 1 minute, or until very frothy.
- Add 1/2 teaspoon vanilla extract, 1/4 teaspoon cinnamon, and a pinch of cayenne pepper to the frothed milk.
- Continue beating for 3-4 minutes, or until soft peaks form.
- Pour the hot chocolate into eight 4-ounce demitasse cups.
- Immediately top each cup with a dollop of the spicy foam.
