How to Make Instant Salabat Ginger Tea

  1. Peel 1 pound (450g) of fresh ginger.
  2. Wash the peeled ginger thoroughly and drain well.
  3. Cut the ginger into thin strips (approximately 1/8 inch thick).
  4. Place 1 cup (about 100g) of ginger strips in a blender or food processor.
  5. Add 1 cup (240ml) of water to the blender.
  6. Cover and blend on high speed for 2 minutes until smooth.
  7. Strain the mixture through a fine-mesh sieve or cheesecloth, pressing firmly to extract all the juice. Collect the juice in a container.
  8. Repeat steps 4-7 until all the ginger strips have been processed. You should have approximately 3-4 cups of ginger juice.
  9. Combine the extracted ginger juice concentrate with 1 kilogram (2.2 lbs) of granulated sugar in a non-stick saucepan.
  10. Bring the mixture to a boil over high heat, then reduce the heat to medium-low.
  11. Stir frequently until the mixture thickens significantly.
  12. Reduce the heat to low and continue stirring until the mixture becomes a thick, moist powder. This will take approximately 60-90 minutes. Keep a close eye on it to prevent burning.
  13. Remove from heat and continue stirring until the mixture cools slightly and resembles a coarse powder.
  14. Let the mixture cool completely. Transfer to a clean, dry, airtight jar or container for storage.
  15. To enjoy: Mix 1 tablespoon of ginger tea powder with 1 cup (240ml) of hot water. Stir well and enjoy your comforting Salabat!
