How to Make Lemon Lime Cookies

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together 1 cup (2 sticks) softened butter and ¾ cup granulated sugar until light and fluffy.
  3. Add 2 tablespoons grated lemon peel, 1 tablespoon grated lime peel, ¼ cup lemon juice, and 2 tablespoons lime juice. Beat in 1 large egg.
  4. In a separate bowl, whisk together 2 ½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 11-13 minutes, or until edges are golden brown.
  8. Cool cookies on baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cookies are completely cool, frost with Lemon Lime Frosting (recipe below).
