- Soft Tofu
- Lemon Gelatin
- Boiling Water
- 1/4 cup (60ml) fresh lemon juice OR 1/4 cup (60ml) fresh lime juice
- 8 oz (227g) container of cool whip (or whipped topping)
- Graham Cracker Pie Crust
How to Make Lemon Or Lime Tofu Pie
- In a medium bowl, dissolve the lemon or lime gelatin in 1 cup of boiling water. Stir until completely dissolved.
- Refrigerate the gelatin mixture until slightly thickened, about 15-20 minutes.
- Drain the tofu thoroughly using a clean kitchen towel or paper towels. Place the drained tofu in a blender.
- Blend the tofu until completely smooth and creamy.
- Add the lemon or lime juice and the slightly thickened gelatin to the blended tofu. Stir to combine.
- Gently fold in half of the cool whip into the tofu and gelatin mixture.
- Pour the mixture into the prepared pie crust.
- Spread the remaining cool whip evenly over the top of the pie.
- Refrigerate for at least 4 hours, or preferably overnight, to allow the pie to set completely.
- Before serving, garnish with mandarin orange segments (optional).
