Ingredients for Lemon Or Lime Tofu Pie

  • Soft Tofu
  • Lemon Gelatin
  • Boiling Water
  • 1/4 cup (60ml) fresh lemon juice OR 1/4 cup (60ml) fresh lime juice
  • 8 oz (227g) container of cool whip (or whipped topping)
  • Graham Cracker Pie Crust

How to Make Lemon Or Lime Tofu Pie

  1. In a medium bowl, dissolve the lemon or lime gelatin in 1 cup of boiling water. Stir until completely dissolved.
  2. Refrigerate the gelatin mixture until slightly thickened, about 15-20 minutes.
  3. Drain the tofu thoroughly using a clean kitchen towel or paper towels. Place the drained tofu in a blender.
  4. Blend the tofu until completely smooth and creamy.
  5. Add the lemon or lime juice and the slightly thickened gelatin to the blended tofu. Stir to combine.
  6. Gently fold in half of the cool whip into the tofu and gelatin mixture.
  7. Pour the mixture into the prepared pie crust.
  8. Spread the remaining cool whip evenly over the top of the pie.
  9. Refrigerate for at least 4 hours, or preferably overnight, to allow the pie to set completely.
  10. Before serving, garnish with mandarin orange segments (optional).
