How to Make Lime Delicious

  1. Preheat oven to 180°C (350°F).
  2. Grease a deep 25cm (10-inch) ovenproof dish or six individual ramekins.
  3. In a medium bowl, cream together 100g (1/2 cup) softened butter, the zest of 2 limes (or lemons), 150g (3/4 cup) granulated sugar, and 4 large egg yolks until light and fluffy.
  4. Sift in 100g (1 cup) gluten-free all-purpose flour (or regular all-purpose flour) and whisk until just combined.
  5. Gradually whisk in 250ml (1 cup) milk until smooth.
  6. In a clean bowl, beat 4 large egg whites until stiff peaks form.
  7. Gently fold the egg whites into the lime mixture until just combined.
  8. Pour the batter into the prepared dish(es).
  9. Place the dish in a larger baking dish. Pour enough cold water into the larger dish to come halfway up the sides of the smaller dish (bain-marie).
  10. Bake for 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
