How to Make Low Fat Choc Orange Cake
- Preheat oven to 180°C (350°F). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, beat 4 large egg whites with 150g granulated sugar until soft peaks form (about 1 minute).
- In a separate bowl, whisk together 120g unsweetened applesauce and 1 teaspoon baking soda. Add to the egg white mixture and gently fold to combine.
- Gently fold in 170g all-purpose flour, 1 teaspoon grated orange rind and 100g chocolate chips alternately with 100ml freshly squeezed orange juice. Be careful not to overmix.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
