How to Make Low Fat Choc Orange Cake

  1. Preheat oven to 180°C (350°F). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, beat 4 large egg whites with 150g granulated sugar until soft peaks form (about 1 minute).
  3. In a separate bowl, whisk together 120g unsweetened applesauce and 1 teaspoon baking soda. Add to the egg white mixture and gently fold to combine.
  4. Gently fold in 170g all-purpose flour, 1 teaspoon grated orange rind and 100g chocolate chips alternately with 100ml freshly squeezed orange juice. Be careful not to overmix.
  5. Pour batter into the prepared loaf pan and spread evenly.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
