How to Make Microwave Mochi

  1. In a medium bowl, combine 1 cup glutinous rice flour, 1/2 cup sugar, 1/4 teaspoon salt, and 1/2 cup water.
  2. Beat with an electric mixer until smooth. Do not overmix.
  3. Lightly grease an 8-inch square microwave-safe dish with non-stick cooking spray or vegetable oil.
  4. Pour batter into the prepared dish and cover tightly with plastic wrap, leaving a small vent for steam to escape.
  5. Microwave on high for 5 minutes.
  6. If your microwave doesn't rotate, carefully rotate the dish 180 degrees after 2 minutes.
  7. Carefully remove the plastic wrap, tilting the dish away from your face to avoid steam burns.
  8. Let the mochi cool completely in the dish.
  9. Once cooled, cut into 12 even pieces using a plastic knife.
  10. Place about 1/4 cup of kinako (roasted soybean flour) on a piece of plastic wrap.
  11. Gently roll each mochi piece in the kinako to coat.
  12. Your delicious microwave mochi is ready to enjoy! The center should be firm.
