How to Make Mint Chocolate Bark

  1. Line a baking sheet with parchment paper.
  2. Set aside.
  3. In a heatproof bowl set over a saucepan of simmering water (double boiler), melt 12 ounces of semisweet chocolate chips, stirring constantly until smooth and melted.
  4. Pour the melted semisweet chocolate onto the prepared baking sheet and spread evenly to a 1/4-inch thickness using the back of a spoon.
  5. In the same double boiler, melt 6 ounces of white chocolate chips with 1 teaspoon of vegetable oil, stirring constantly until smooth.
  6. Remove from heat. Stir in 1 teaspoon peppermint extract and a few drops of green food coloring (optional). Mix well.
  7. Pour the white chocolate mixture over the semisweet chocolate layer. Spread to a 1/8-inch thickness using the back of a spoon.
  8. Use a toothpick or skewer to create a swirl pattern (optional).
  9. Refrigerate for at least 30 minutes, or until completely firm.
  10. Once firm, lift the bark from the baking sheet.
  11. Peel off the parchment paper.
  12. Place the bark on a cutting board and cut into 2 dozen bars using a sharp knife.
  13. Store in an airtight container in the refrigerator.
