How to Make Moist Spiral Cut Ham With Pineapple Honey Glaze

  1. Place the spiral-cut ham (still in its original plastic wrap) in a large container.
  2. Cover the ham completely with hot tap water.
  3. Let the ham sit in the hot water for 45 minutes. Drain and repeat this process with fresh hot tap water for another 45 minutes. This pre-soaking helps raise the ham's internal temperature for even cooking.
  4. Preheat your oven to 250°F (120°C). Adjust the oven rack to the lowest position.
  5. Remove the ham from the water and carefully remove all the original packaging, including the plastic disk covering the bone.
  6. Place the ham, cut-side down, inside a large oven bag. Gather the bag tightly around the ham and securely tie it closed.
  7. Place the oven bag in a large roasting pan. Use a knife to cut 4 small slits in the top of the bag to allow steam to escape.
  8. Bake the ham at 250°F (120°C) until its internal temperature reaches 100°F (38°C).
  9. While the ham is baking (during the last 15-20 minutes of cooking time), prepare the glaze:
  10. In a small saucepan, combine the following ingredients: 1/2 cup granulated sugar, 1/4 cup packed brown sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, 1/4 teaspoon ground allspice, 1/4 teaspoon ground nutmeg, 1/4 teaspoon paprika, and 1/4 teaspoon ground ginger.
  11. Add 1/2 cup pineapple juice and 1/4 cup honey to the saucepan. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture slightly thickens. Remove from heat. If the glaze is too thin, add a little more pineapple juice until it reaches a pourable consistency.
  12. Remove the ham from the oven. Carefully untie the oven bag and roll down the sides, reserving the juices inside the bag.
  13. Increase the oven temperature to 350°F (175°C).
  14. Using toothpicks, attach pineapple slices to the bottom, cut portion of the ham.
  15. Pour 1/4 of the glaze over the ham.
  16. Return the ham to the oven and bake for 10 minutes. Repeat this glazing process two more times, reserving the remaining glaze for serving.
  17. After the final glazing, remove the ham from the oven. Remove the pineapple slices and set aside.
  18. Reserve the liquid from the bottom of the oven bag. Many enjoy adding this to the leftover glaze for extra flavor.
  19. Place the ham on a platter and serve. Offer the glaze and reserved ham juices in a gravy boat for guests to add as desired. Serve with reserved pineapple slices.
