How to Make Mom's Shoofly Pie

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, pour 1 cup of boiling water over 1 teaspoon of baking soda. Let it fizz for a minute.
  3. Stir in 1 ½ cups of molasses until well combined.
  4. In a separate bowl, combine 2 cups of graham cracker crumbs, ½ cup of all-purpose flour, ½ cup of packed light brown sugar, and ½ teaspoon of ground cinnamon.
  5. Mix half of the crumb mixture into the molasses mixture.
  6. Pour the molasses and crumb mixture into two 9-inch pie shells.
  7. Sprinkle the remaining crumb mixture evenly over the top of both pies.
  8. Bake for 30-40 minutes, or until the crust is golden brown and the filling is set. A toothpick inserted into the center should come out with moist crumbs attached.
  9. Let cool completely before serving. Enjoy!
