How to Make Nilla Wafers Original Banana Pudding

  1. In a double boiler's top, whisk together 1/2 cup (100g) granulated sugar, 1/4 cup (30g) all-purpose flour, and 1/4 teaspoon salt.
  2. Whisk in 4 large egg yolks and 2 cups (475ml) whole milk until well combined.
  3. Cook over simmering water, whisking constantly, until the mixture thickens enough to coat the back of a spoon (about 8-10 minutes).
  4. Reduce heat to low and cook for 5 minutes more, stirring occasionally.
  5. Remove from heat and stir in 1 teaspoon vanilla extract.
  6. Spread a thin layer of the custard in the bottom of a 1 1/2-quart casserole dish.
  7. Layer with approximately 1/3 of a package of Nilla Wafers.
  8. Top with a layer of sliced bananas (about 2 ripe bananas, sliced).
  9. Pour about 1/3 of the remaining custard over the bananas.
  10. Repeat layers: wafers, bananas, and custard, ending with a custard layer.
  11. In a clean bowl, beat 4 large egg whites until soft peaks form.
  12. Gradually add 1/4 cup (50g) granulated sugar, beating until stiff, glossy peaks form.
  13. Gently spread the meringue over the top of the pudding, sealing the edges.
  14. Bake at 425°F (220°C) for 5-7 minutes, or until the meringue is lightly browned.
  15. Cool slightly before chilling for at least 2 hours.
  16. Garnish with additional banana slices and stand Nilla wafers upright around the edge of the dish before serving.
