How to Make Oataroons

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat 1 large egg white with an electric mixer on medium speed until frothy.
  3. Add 1/4 teaspoon cream of tartar and beat on high speed until stiff, glossy peaks form.
  4. Gradually add 1/2 cup granulated sugar, beating well after each addition until fully incorporated.
  5. Stir in 1 teaspoon almond extract.
  6. Gently fold in 1/2 cup rolled oats and 1/2 cup chopped walnuts.
  7. Drop rounded teaspoons of the mixture onto the prepared baking sheet, leaving some space between each cookie.
  8. Bake for 12-15 minutes, or until the bottoms of the cookies are lightly golden brown.
  9. Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
