How to Make Orange Pepper Beef Steaks

  1. Preheat your broiler to high heat.
  2. In a small saucepan, gently warm 1/4 cup orange marmalade, 2 tablespoons red wine vinegar, and 1 tablespoon grated fresh ginger.
  3. Generously sprinkle 1 teaspoon black pepper over both sides of each beef tenderloin steak, pressing gently to adhere.
  4. Place steaks on the rack of a broiler pan. Brush the tops of the steaks with half of the warm marmalade mixture.
  5. Broil steaks 2-3 inches from the heat source for 6-8 minutes per side for medium-rare (internal temperature 130-135°F), or 7-9 minutes per side for medium (internal temperature 140-145°F). Turn steaks halfway through and brush with the remaining marmalade mixture.
  6. Remove steaks from broiler and let rest for 5 minutes before serving. Serve immediately with parsleyed potatoes, steamed asparagus, and carrots.
